How to Make Adorable Vegan Bunny Buns

Springtime always feels like the perfect moment to whip up something fun, festive, and a little bit whimsical. Whether you're celebrating Easter, hosting a garden party, or just looking for a way to brighten your weekend, vegan bunny buns are a delightful treat that will make everyone smile. Soft, fluffy, and just sweet enough, these buns are shaped like tiny bunnies — perfect for kids and adults alike.
Here’s everything you need to know to bake your own batch of vegan bunny buns!
Ingredients
For the Dough:
1 1/3 c. Unsweetend almond milk
4 tsp. Yeast
4 Tbsp. Smart Balance Butter
4 cup Flour * can use 1 to 1 gluten free flour here to make gluten free
1 tsp. Salt
4 Tbsp. Smart Balance Butter
1 Flax egg (1 Tbsp ground flax + 3 Tablespoons water. Let sit for 5 min.)
¼ - 1/3 cup Sugar
Instructions
1. Activate the Yeast
In a small bowl, combine the warm plant milk and butter, and half the sugar. Sprinkle the yeast over the top and let it sit for 5–10 minutes until frothy. If it doesn't foam, your yeast might be inactive — try again with fresh yeast.
2. Make the Dough
In a large mixing bowl, combine the flour, remaining sugar and salt. Add the yeast mixture, Mix until a shaggy dough forms.
Turn the dough out onto a lightly floured surface and knead for about 8–10 minutes until it becomes smooth and elastic. (You can also use a stand mixer with a dough hook.)
3. First Rise
Place the dough in a lightly oiled bowl, cover it with a clean towel or plastic wrap, and let it rise in a warm spot for about 1 hour, or until doubled in size.
** I love to use my Zojirushi Home Bakery Supreme Beadmaker I place the flour, salt and half the sugar in the breadmaker, than let the milk butter, yeast and the other half of the sugar froth, while mixing the flax egg. than placing all of the ingredients in the breadmaker and choosing quick dough or regular dough settings.
4. Shape the Bunny Buns

Once risen, punch down the dough and divide it into about 12 equal pieces.
For each bunny:
Divide dough into 24 balls
Pinch off a small bit of dough for the tail and roll it into a tiny ball.
Roll another small piece into a rope about 4–5 inches long, and twist it into a spiral for the bunny's ears.
Attach the tail and ears to the body, pressing gently so they stick.
5. Second Rise
Place the shaped bunnies on a baking sheet lined with a Silpat or with parchment paper. Cover loosely and let them rise for another 30–40 minutes.
6. Bake
Preheat your oven to 375°F
Bake for 12-14 minutes, or until lightly golden brown.
7. Cool and Enjoy
Let the buns cool slightly before lightly buttering. These bunny buns are best enjoyed fresh, but you can also store them in an airtight container for a day or two.
Tips for Perfect Bunny Buns
Flavors: Add a little lemon zest or cinnamon to the dough for a seasonal twist.
Glaze: For extra sweetness, brush with a simple glaze made from powdered sugar and plant milk once they cool.
Savory Option: Skip the sugar and vanilla, and fill them with herbed vegan cheese for a savory version!
