Oat Blender Waffles

I'm not a huge breakfast food fan, but I have come to really appreciate this recipe. The biggest draw is how easy it is and how accessible these waffles are when you just need a good snack or a filling meal. In addition, they are a good deal more flavorful than a "regular" waffle, thanks to some nutrition-boosting ingredients that actually amp up the flavor. Finally, they are protein-plentiful, which makes them filling and satisfying.
Even though I'm not a traditional waffle fan, I often grab a couple of these to pop in the toaster and eat out of hand on the go -- no toppings needed! If you happen to be a waffle fan like my husband, they shine with traditional toppings in a traditional breakfast as well.
The original recipe comes from PlantWhys, one of our favorite plant-based websites. We follow it closely, but have made just a few little tweaks for the sake of saving time. You can find that original recipe HERE.

Oat Blender Waffles
Makes: 12 medium waffles
Ingredients
3 cups old-fashioned or rolled oats
1/2 cup defatted peanut butter powder (like PB2 Pure)
2 teaspoons baking powder
1 teaspoon baking soda
1 tablespoon apple cider vinegar or lemon juice
1/2 teaspoon salt
2 teaspoons ground cinnamon
2 tablespoons vanilla extract
1 banana
2 cups unsweetened soy milk
Instructions
Add oats to a high-speed blender and blend until a fine flour forms.
Add the remaining ingredients to the blender and blend until smooth.
Pour the batter into a preheated waffle iron and cook according to your waffle maker’s instructions.
Follow these tips for convenience
Make two batches (or more) so you'll have plenty to freeze. But be sure to blend up the oats for the second batch and set them aside before you add all the ingredients for the first batch. That way you won't have to wash your blender between batches.
When you're blending the flour, simply use the graduated marks on your blender to pour in 3 cups of oats. No need to measure them.
Quick freeze waffles on a cookie sheet individually before transferring them to a large plastic bag to store in freezer. This will keep the waffles flat so they fit well in the toaster.
When you want a waffle later, simply pop in the toaster and enjoy -- plain or with toppings!
When it's time to load the dishwasher, the only thing you need to put in is the blender and a couple of measuring spoons. Let these waffles be yet another item to help keep you on a healthy track with your plant-based eating.
