If you love banana bread, you’re going to adore plantain bread — it’s rich, moist, and full of flavor. Made with ripe plantains instead of bananas, this bread has a slightly caramelized sweetness and a tropical twist that makes every bite irresistible. Plus, it’s 100% plant-based and easy to make with simple pantry ingredients.

How did I come across this amazing discovery, It had been a long week with sick kids. one of my kids asked me to get some sweet fruit. I tried to order bananas but in my sleep deprived mind i accidently ordered $10 worth of plantains.... :0 I had no idea what to do with them, So after waiting a week for them to ripen i decided why not try a bread? Its Delicious!!


Why Plantain Bread?

Plantains are a powerhouse ingredient — they’re rich in potassium, fiber, and vitamins A and C. When ripe, their natural sugars make them perfect for baking without needing a ton of added sweetener. Plus, they give this bread a perfectly tender texture that rivals any traditional loaf.


Ingredients

2 cups flour (all purpose, whole wheat or oat)

2 tsp baking powder

1 tsp salt

3/4 cup maple syrup, coconut sugar, sweetener of your choice.

2 large ripe plantains (mostly black or heavily spotted for natural sweetness)

8 TBSP melted coconut oil

1/4 cup plant based yogurt

1/2 cup applesauce

3 Tbsp almond milk

1 tsp vanilla extract

Optional:1/2 tsp cinnamon, ½ cup chopped nuts, dark chocolate chips, or shredded coconut


Instructions

Preheat the oven to 350°F (175°C). Lightly grease and flour a loaf pan .

Mash the plantains in a large bowl until smooth (a few small lumps are fine).

Add the coconut oil, sugar, applesauce, milk and vanilla, and whisk together until creamy.

In another bowl, whisk together the flour, baking powder, and salt.

Combine the wet and dry ingredients. Stir until just combined — don’t overmix.

Fold in any optional add-ins like nuts or chocolate chips.

Pour the batter into the loaf pan and smooth the top.

Bake for 56–50 minutes, or until a toothpick comes out clean.

Let cool for 10–15 minutes before slicing and serving.

Serving Ideas

Enjoy warm with a drizzle of nut butter or a scoop of vegan yogurt.

Toast leftovers for a quick breakfast or snack.



Tips & Variations

For a spicier twist, add nutmeg or allspice.

Use greenish-yellow plantains for a less sweet, more bread-like loaf.

Store in an airtight container at room temperature for up to 3 days, or refrigerate for a week.
