Italian White Beans On Toast

Once upon a time I would not have even slowed down my scrolling for a recipe like this. I'm sure glad that has changed! I didn't like beans in my previous life, and still don't get overly excited about them....unless I have a wonderful way to eat them like this.

Beans are the BEST....truly a magic bullet in so many ways. This recipe is also inexpensive, quick to prepare, and can even be eaten hot or cold, making it a great choice for meals on-the-go as well. The original recipe is from one of our favorite websites and can be found at the link below. We simply tweaked a few things to make it faster and easier. It still tastes amazing!


The flavors are so vibrant and bold, you'll love every bite!



Ingredients

1 can white beans, drained and rinsed

2 teaspoons dried basil or ¼ cup fresh herbs, chopped (cilantro, basil, etc.)

¼ cup red bell pepper, chopped

1 tablespoon balsamic vinegar (or red wine or other comparable type)

1 garlic clove, minced

¼ teaspoon Italian seasoning

1 teaspoon maple syrup

salt and pepper to taste

2 slices bread, (we like whole grain sourdough)



Instructions

  1. Drain and rinse the can of beans.

  2. Stir in remaining ingredients and mix well.

  3. Toast the bread and spoon half of the mixture on each slice.


Eat immediately or keeps well in fridge and tastes even better after a few hours.


Works well for breakfast, lunches or any meal on the go.
