Lentil "Hamburger" Bowls

This meal REALLY satisfies our occasional cravings for a burger but keeps things plant-based, protein-rich, and blood sugar-friendly. Lentil "Hamburger" Bowls are a weird combination of ingredients that happen to magically come together and hit the spot! You have to try it to believe it. Seriously good, and very filling and satisfying.
We got this recipe from Plantwhys.com and we use it often as part of our ongoing series of high-protein, low-fat, and low-calorie meals designed to nourish and energize while supporting insulin sensitivity and sustainable weight loss.

🍚 Ingredients:
1 cup dry lentils
2 cups water
2 tsp. Thrive beef bouillon
1/4 cup diced red onion
1 tablespoon ketchup
1 teaspoon Worcestershire sauce (vegan, if possible)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Possible Toppings:
2 cups romaine lettuce chopped or torn
1/2 cup brown rice (basmati or long grain)
1/2 large tomato, chopped
1/8 cup chopped dill pickles
2 teaspoons chopped onion
Drizzle of mustard and/or ketchup
🍽️ Directions:
Cook lentils and rice: Rinse lentils and combine with 2 cups of water or broth. Bring to a boil, then reduce heat, cover, and simmer for 35–40 minutes, checking occasionally and adding water if needed. Cook rice according to package directions.
Flavor the lentils: Place cooked lentils in a skillet over medium heat. Add diced red onion, ketchup, Worcestershire sauce, garlic powder, and onion powder. Stir until everything is well mixed and heated through.
Assemble the bowls: Start with 2 cups of chopped romaine lettuce as your base. Add 1/2 cup of brown rice, a scoop (about 1/4 of the recipe) of the seasoned lentil mixture, and your desired toppings (chopped tomato, dill pickles, extra onion). Drizzle with mustard and ketchup.
Easy to customize, these bowls offer the taste of a classic burger experience—without the heaviness. They're great for meal prep too, because the ingredients can be made ahead and enjoyed as leftovers.
TIP: Make the lentils and rice ahead of time (and make double the amount) and freeze. Then you can put your bowls together in minutes without advanced preparation.
