If you’re craving something that tastes like pure summer comfort but can be enjoyed year-round, roasted tomatoes with vegan mozzarella and basil are a perfect choice. This dish brings together the sweetness of slow-roasted tomatoes, the creamy melt of plant-based mozzarella, and the aromatic freshness of basil. It’s simple, beautiful, and makes your kitchen smell like an Italian trattoria.
Why This Recipe Works
Roasting tomatoes intensifies their natural sweetness, turning even out-of-season ones into little flavor bombs. Pairing them with vegan mozzarella gives you that indulgent, cheesy creaminess without dairy, and the basil adds a fresh, peppery brightness to balance it all out.
What You’ll Need
Tomatoes: Roma or cherry tomatoes work best for roasting.
Salt & pepper: To season and enhance flavor.
Vegan mozzarella: Store-bought shreds or a homemade cashew-based version.

Fresh basil leaves: Tear them by hand for the best aroma.
How to Make It

Preheat your oven to broil.
Slice tomatoes in half (or leave small cherry tomatoes whole) and place them on a lined baking sheet. *this is where i love to use my Silpat (As you can see we use them a lot)

Drizzle Miyoko's Organic Liquid Vegan Pizza Mozzarella then sprinkle with salt and pepper.
Roast on broil for 5-8 min, or until they’re soft, wrinkled, and caramelized at the edges
Finish with fresh basil leaves before serving.
Serving Ideas
As a side dish for pasta or grilled veggies.
On toasted sourdough for a bruschetta-style appetizer.
Over a bed of leafy greens for a warm salad.
Tips for Success
Use ripe tomatoes for the best flavor, but if they’re a bit underripe, roasting will still bring out their sweetness.
For extra flavor, add a pinch of garlic powder or balsamic vinegar before roasting.
Tear the basil rather than chopping it—this helps release its oils without bruising the leaves.
Whether you enjoy them fresh from the oven or at room temperature, roasted tomatoes with vegan mozzarella and basil are the kind of dish that proves plant-based eating can be both decadent and simple.
I hope you enjoy it as much as we did!
