This dish brings together the sweetness of slow-roasted tomatoes, the creamy melt of plant-based mozzarella, and the aromatic freshness of basil. Preheat your oven to broil.


Slice tomatoes in half (or leave small cherry tomatoes whole) and place them on a lined baking sheet. *this is where i love to use my Silpat (As you can see we use them a lot)

Drizzle Miyoko's Organic Liquid Vegan Pizza Mozzarella then sprinkle with salt and pepper.


Roast on broil for 5-8 min, or until they’re soft, wrinkled, and caramelized at the edges

Finish with fresh basil leaves before serving.

As a side dish for pasta or grilled veggies.


On toasted sourdough for a bruschetta-style appetizer.


Over a bed of leafy greens for a warm salad.


Tips for Success


Use ripe tomatoes for the best flavor, but if they’re a bit underripe, roasting will still bring out their sweetness.
