This week I wanted to try chickpea again. ( I love them in many other dishes. But wanted to try something that they were the star of).
Creamy garlic chickpeas with spinach.

Ingredients
3 tablespoons extra virgin olive oil
1 small onion, finely chopped
8 cloves garlic, roughly chopped
2 tablespoons all-purpose flour
1/2 teaspoon sweet smoked paprika
1 teaspoon dried oregano
1 cup almond milk
1 cup vegetable broth * thrive life vegetarian chicken bouillon "- 1 cup of water + 1 teaspoon bouillon
2 cans (15.5 oz each) chickpeas, drained and rinsed
A large handful of fresh spinach, chopped
2 tablespoons nutritional yeast
2 teaspoons lemon juice
Sea salt and black pepper to taste.
Instructions
Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 3 minutes until the onion becomes translucent.
Create Roux: Sprinkle in the flour, stirring continuously for 2 minutes to cook out the raw taste.
Add Spices: Stir in the paprika and oregano, mixing well to combine with the roux
Incorporate Liquids: Gradually pour in the milk and vegetable broth, stirring constantly to prevent lumps. Continue to cook for a few minutes until the sauce begins to thicken.
Add Chickpeas: Introduce the drained chickpeas to the skillet, stirring to coat them evenly with the sauce. Let them simmer for about 5 minutes to absorb the flavors.
Wilt Spinach: Add the chopped spinach, stirring until it wilts and integrates into the sauce.
Finish with Cheese and Lemon: Stir in the lemon juice, allowing the flavors to meld. Season with salt and black pepper to taste.
